Fettuccine Chicken Opor – Combination of Chicken and Milk!

Ingredients

The main ingredient:

Ground spices:

  • 10 red onion cloves
  • 5 cloves of garlic
  • 5 candlenuts
  • 1.5 turmeric segments
  • 1.5 pieces of ginger
  • 1/2 tbsp (tablespoon) coriander powder
  • Oil
  • 1 tsp (teaspoon) salt
  • 1/2 tsp mushroom seasoning
  • 1/2 tsp white pepper

Stir fry seasoning:

  • 2 galangal segments
  • 1/2 stalk crushed lemongrass
  • 4 lime leaves
  • 1 bay leaf
  • 1 star anise

Other ingredients

  • 300 ml cooking cream
  • Fried onions
  • Pasta: 200 gr fettuccine
  • 400 ml of opor sauce
  • 500 ml of water
  • 4 pieces of shredded chicken
  • Oyster mushrooms to taste (according to taste)
  • 2 red cape chilies (can also be curly, cayenne, etc.)
  • Fried onions
  • Coriander leaves to taste

How to Make It?

1. Wash the chicken thoroughly, sprinkle with salt and lemon juice, then let it for 30 minutes

2. Pour all the spice ingredients with a blender

3. Saute all the spices using a little oil until fragrant

4. Add the ground spices, stir until the chicken is coated with the spices, stir-fry briefly

5. Pour it in the Arummi cashew milk and stir until all the spices have dissolved, leave over medium-low heat and cover the pan so that the chicken cooks faster, becomes softer and the spices are absorbed. Let it for 45 minutes or until chicken is tender. After the chicken is cooked, separate 400 ml of opor sauce to make a paste, leave the rest overnight with the chicken, so that the flavors absorb, then shred the chicken.

To make the paste:

6. Boil water, add the pasta and wait until the pasta is limp before adding the opor sauce. Mix it well!

7. Add red chilies, oyster mushrooms and shredded chicken, cook until pasta is al dente

8. Add coriander leaves, stir until evenly mixed. Then, serve while it is still warm.
